German Federweißer is a wine press fresh product from the new harvest. It will be loaded cool and filtered directly after the bottling. The alcoholic grape juice drink is in fermentation. This means that the wine yeast converts fructose to alcohol and carbonic acid.
It is often possible that a yeast depot can be formed in the bottleneck. That happens if it is a very fresh must or if the cooling is started too early. This is a quality feature for freshness and will be dissolved in the further course of fermentation.
This partially fermented grape must is at the beginning slightly cloudy and grape sweet. In the fermentation Federweißer is cloudy, sparkling and semisweet and in the maturity cloudy, herb and almost fermented.
