What is Federmost? Federmost is a wine press fresh product of the new harvest. It is loaded cool and filtered directly after the bottling. The alcoholic grape juice drink is in the process of fermentation. This means that the wine yeast converts fructose to alcohol and carbonic acid.
It is often possible that a yeast depot can be formed in the bottleneck. This happens if it has been bottled freshly or if the cooling has started too early. This is a quality feature for freshness and it will be dissolved in the further course of fermentation.
This partially fermented grape must is at the beginning slightly cloudy and sweet. In the fermentation Federweißer is cloudy, sparkling and semisweet and in the maturity cloudy, herb and almost fermented.
