Ingredients (for 12 pieces)
100 grams of butter
120 grams of sugar
1 packet of vanilla sugar
2 eggs
230 grams of flour
2 teaspoons of baking powder
5 tbsp lime juice
150 ml Hugo (e.g. GERSTACKER)
For the topping: 100 g mascarpone, 100 g butter, 150 g curd cheese, 100 g powdered sugar, 3 tablespoons elderflower syrup
For the decoration: 2 limes, some mint
Preparation
a) Place paper cupcake cases on the baking sheet. Preheat oven.
b) Cream the butter with a hand mixer. Add sugar, vanilla sugar and eggs and mix well. Add the flour mixed with the baking powder, the pinch of salt, lime juice and the Hugo and stir to form a smooth batter.
c) Pour the batter into the muffin cases and bake for about 20 minutes. Then let it cool down.
d) In the meantime, prepare the topping: mix the butter, mascarpone, cream cheese, powdered sugar and elderflower syrup into a firm cream. Leave to chill in the fridge for about 45 minutes.
e) Fill the cream into a piping bag and pipe onto the cooled cupcakes. Finally decorate the cupcakes as you wish.
